Bonjour à tous !
Notre semaine a démarré sur les chapeaux de roue hier soir avec 3 recettes ! Nous avons réalisé des pains naan, des beignets de légumes et du chutney aux mangues :

C‘était très bon mais c‘était aussi très long à préparer. Sarah-Claude devait travailler hier donc j‘ai fait les trois recettes à moi toute seule. Voici mes tout premiers conseils de cuisine sur ce blog et probablement de ma vie vu mon niveau de cuisine très basique : ne faites pas confiance aux temps de préparation indiqués sur les recettes. Malheureusement, je n‘avais pas assez de temps devant moi quand j‘ai commencé, je n‘ai donc pas eu le temps de finir les recettes hier soir et ai fini aujourd’hui.

Le yaourt et le fromage ont été remplacés dans ma recette par leurs équivalents à base de soja.

Our week started at top speed yesterday evening with 3 recipes ! We made naan breads, biryanis and mango chutney (picture in the french part).
It was very good but also very long to cook. Sarah-Claude had to work yesterday so I made the three recipes by myself. Here are my very first tips about cooking on this blog but probably ever too based on my very basic cooking skills : don‘t trust the preparation time written on the recipes. Unluckily, I had not so much time to cook, I didn‘t have enough time to finish some recipes on yesterday evening and I finished today.

Naan bread
Prep Time : 10 minutes
Cooking Time : 6 minutes
Total : 16 minutes
6 pieces
Ingredients
Flour : 300 g
Plain soy/almond/cashew/coco yogurt : 1
Salt : 1 pinch
Baking powder : 5,5 g
Canola oil : 1 tablespoon
Warm water : 1 glass
Soy/cashew/… cheese : 1 handfull
Preparation
Step 1
Mix the flour with the salt, the baking powder, the oil and the yogurt.
Step 2
Knead the dough and add some warm water to get a soft dough.
Step 3
Let it stand for 10 minutes.
Step 4
Separate the dough in 6 parts and make them flat to form a galette.
Step 5
Sprinkle generously the cheese. Fold it and make it flat again twice.
Step 6
Cook on a anti-adhesive pan during 3 minutes on each side until the galette is well inflated.
Step 7
Serve very hot.
Mango chutney
Total Time : 1h10
For 6 people
Ingredients :
Green mangos : 6
Fresh red chillis : 3
Fresh ginger : 30 g
Dried grapes : 100 g
Sugar : 400 g
Sherry vinegar : 30 cL
Salt : 2 teaspoons
Preparation :
Step 1
Cut the mangos in half, take out the seed, then peel them. Grate the pulp on a cylindrical grate with big holes over a strainer then sprinkle the salt on it and let it spew out during 30 minutes.
Step 2
In the mean time, wash the chillis, cut them in half, take off the stalk and the seeds. Chop the pulp. Put it in the electrical vegetable mill while pouring a little vinegar, until you get a fine paste. Peel the ginger and chop it. Chop the dried grapes. Let it stand.
Step 3
When the mango is spewed out enough, press it with the back of a spoon to extract all of the water. Let it stand.
Step 4
Pour the rest of the vinegar and the sugar in a pot and put it on medium heat.
Step 5
Add the chilli paste and the ginger. Let it cook for 10 minutes.
Step 6
Add the dried grapes and mix. Let it cook for 5 minutes, then take it off the heat and let it cool lightly. Put it in jars while hot.
Step 7
You also can add some cumin powder and coriander powder during the cooking.
Pakoras - Vegetables donut.
Prep Time : 15 minutes
Heating Time : 5 minutes
Total : 20 minutes
For 6 people
Ingredients :
Chick peas flour : 250 g
Spinach leaves : 12
Eggpplant : 1
Potato : 1
Onion : 2
Frying oil : 1
Garam massala : 1 teaspoon
Ground cumin : 1 teaspoon
Paprika : 1 teaspoon
Tumeric : 1 teaspoon
Salt
Preparation :
Step 1
Mix the flour with all spices. Add salt. Add some water in order to get a thick dough.
Step 2
Wash and dry the spinach leaves. Cut the eggplant in small dices (around 2 cm).
Step 3
Peel and slice the potato in 3 mm wide slices. Slice the onions and dry them.
Step 4
Dip all the vegetables in the dough. Form donuts and dive them in the frying oil during a few minutes while turning them around so that the vegetables can cook.
Step 5
Serve warm with chutney.
