Cucumber raïta
Preparation : 10 minutes
For 4 people
Ingredients
Cucumber : 1
Onion, : 1
Garlic : 1 clove
Soy/coconut/cashew/... yogurts : 2
Green onion : 1
Cumin : 1 teaspoon
Red chilli : 1
Salt & Pepper
Preparation
Step 1
Cut the cucumber in half in the length, empty the seeds and grate it on a big grate.
Step 2
Put the cucumber in a strainer, let it drop during 10 minutes and press it to remove most of the juice.
Step 3
Chop the onion and garlic, add them to the cucumber with the yogurts, salt, pepper, cumin and chilli to taste.
Step 4
Put green onion rings on top.
Dhal
It's a recipe from a french youtuber called Esther. She just started a program to help people in their transition to veganism, it's called #OmnitoVeggie. The link to her recipe is in the french part.
For 4 people
Ingredients :
Coral lentils : 4 glasses
Yellow onion : 1
Garlic : 1 or 2 cloves
Curry : 2 tablespoons
Tomato concentrate : 1 box of 170 g
Coconut oil : 1 tablespoon (if you want)
Preparation :
Step 1
In a pot, put the coconut oil and sauté the chopped onion and chopped garlic cloves.
Step 2
When the onions are gold, add curry and sauté them during 3 minutes.
Step 3
Add a glass of water, the lentils, the concentrate and stir to put the concentrate everywhere.
Step 4
Let it cook over low heat during 20 to 30 minutes while stiring for time to time.
Step 5
Add water if the lentils don‘t cook properly or if they stick to the pot.
Step 6
Serve with complete rice and green vegetables.
Kulfi - Ice cream
Preparation Time : 10 minutes
Cooking Time : 30 minutes
Total Time : 40 minutes
For 6 people
Ingredients :
Coconut milk : 2L
Green cardamoms : 12
Powdered sugar : 180 g
Chopped almonds : 25 g
Sliverred almonds and cardamomes : decoration
Preparation :
Step 1
Put the milk and cardamoms in a thick bottom pot ; let it boil with big bubble, while stiring, until the liquid is smaller by a third.
Step 2
Pour the milk through a filter and into a bowl. Throw away the cardamoms.
Step 3
Add the sugar and the chopped almonds while stiring.
Step 4
Let it cool down.
Step 5
Transfer the mix into an adapted recipient, cover and leave in the freezer until the preparation is almost solid.
Step 6
Put the ice cream in 6 small individual moulds and put back in the freezer.
Step 7
Take the moulds out around 10 minutes before serving. Take the ice cream out of the mould, decorate with grilled almonds and the cardamoms seeds.
