Bonjour !

//Hi everyone !

We are back this week with the Philippines ! The recipes look pretty good :) On our post from last week, Marie-Pier said that we could eat Europe next week and we picked Greece ! Don't hesitate to share your greek recipes with us or propose a continent for the following week in the comments !

Let's go with the first recipes of the week !

Rice vermicelli with vegetables

For 2 people

Ingredients :

Rice vermicelli : 2 nests

Green cabbage : 1 quarter of one

Carrot : peeled and cut in thin slices

Onions : 2 small chopped ones

Ginger : 1 inch, peeled and grated

Shallot : 1 minced

Tofu sausages : 100 g, cut

Garlic : 2 minced cloves

Lime juice : 1 lime

Brown sugar : 1 teaspoon

Soy sauce : 1 tablespoon

Parsley or cilantro

Preparation :

Step 1

Cook the vermicelli as written on the bag. On mine, it was : boil water, put the vermicelli in for 2 minutes, drain and reserve them.

Step 2

Chop finely the cabbage. Reserve.

Step 3

Mix the sugar, soy sauce and lime juice in a small bowl. Reserve.

Step 4

Heat up some oil in a pan and sauté the cut sausages, garlic, shallot and ginger over high heat. Stir constantly during around 2 to 3 minutes. Lower the heat.

Step 5

Add the other vegetables (onions, cabbage, carrot) and let it cook while stirring from time to time, until the vegetables are tender but still crunchy.

Step 6

When the vegetables are ready, add the vermicelli and the sauce in the pan. Stir for all the ingredients to be mixed together, add parsley and serve, with a little of sriracha sauce on top.

Polvorones

Ingredients :

White flour : 2 cups

Coconut milk powder : 1 cup

Powdered sugar : 1 cup

Melted margarine : ½ cup

Preparation :

Step 1

Cook the flour over medium heat while stirring regularly, during around 10 minutes, until it gets slightly brown (avoid anti-adhesives pan, they need some kind of liquid on them and they liberate some toxic chemicals). Transfer in a bowl and let it cool down.

Step 2

Add the milk powder and sugar, mix well. Add the melted margarine and hand mix to get a sandy dough, slightly humid.

Step 3

Put the dough in some round prints or in a muffin trail and remove them from the mold on a trail.

Step 4

Put in the fridge so they can get harder then serve with coffee or tea for example.

Hint : My guess is that the margarine can be replaced by some coconut oil but I didn't try it.

Fruits salad

Ingredients :

Coconut : 1

Mangoes : 2

Strawberries : 4

Coconut milk : 10 cL

Salt : 1 pinch

Coconut sugar : 2 teaspoons

Preparation :

Step 1

Open the coconut, extract the juice. Cut the coconut in two pieces. With a fork, grate the inside of the nut and with a spoon, collect the flesh of the nut. Remove the rind.

Step 2

Cut the mangoes and put the pieces in a bowl, then mix them with the coconut pieces. Cut the strawberries and add them too.

Step 3

Add the coconut milk, salt, coconut sugar and mix well.

Step 4

Serve.
