Mavromatika salad
For 6 to 8 people
Ingredients :
Black eyed peas : 200 g
Red pepper : ½
Orange pepper : ½
Green pepper : ½
Green onion : 1
Parsley : 1 small bouquet
Vinaigrette :
Mustard : ½ teaspoon
Lemon zest : 1
Lemon juice : 15 mL
Raspberry vinegar : 5 mL
Olive oil : 30 mL
Sunflower oil : 20 mL
Salt : 1 small teaspoon
Preparation :
Step 1
Put the peas in a pot and cover with water. Cook until the peas are tender during around 40 minutes.
Step 2
Ten minutes before the end, salt the water.
Step 3
Drain the peas and let it cool down.
Step 4
Chop the pepper, onion and parsley. Mix with the cool downed peas.
Step 5
Prepare the vinaigrette in putting all the ingredients in a small blender. Pour the vinaigrette just before serving it.
Christopsomo
Ingredients :
Flour : 1 kg
Baker’s yeast : 40 g
Warm water : around 550 mL
Salt : 1 teaspoon
Sugar : 20 cL
Cinnamon powdered : 1 tablespoon
Olive oil : 100 mL
Crushed walnuts : 300 mL
To decorate :
Salty dough : flour : 200 g, salt : 1 big tablespoon, water

Preparation :
Step 1
In a bowl, pour 200 mL of warm water and mix the yeast and 200 mL of flour. Mix well and let it stand for 15 minutes in a warm place. Add salt, sugar, cinnamon and oil.
Step 2
Add 200 mL of flour and knead while pouring some warm water and some flour in alternance to get a soft dough. Crush the walnuts and coat them in flour then add them to the dough. Knead during 15 minutes in order to get a flexible dough. Add some water or flour if necessary.
Step 3
In a oiled oven plate, place the dough ball, cover it and put it in a warm place during 1 hour so that it expands.
Step 4
In the meantime, prepare the salty dough for the decorations. Let it stand for 15 minutes and form the decorations (flowers, leaves, …).
Step 5
Preheat the oven on 355°F. Collect some of the dough and form 2 rods to stick with a little of water on the dough which will have expand to represent a cross. Sink a whole clean walnut at the intersection of the 2 rods. Put the decorations and fix them with a clove. Put it in the oven during 1 hour.
