Nos vacances commencent enfin, après cette fin de session bien chargée. Nos recettes des pays chaque semaine seront de retour mi-janvier ! Entre temps, j'essayerai de poster des articles à propos du véganisme et des recettes des fêtes de fin d'année.

Our vacations are finally beginning, after the end of this semester which was heavy. Our recipes from the countries each week will be back mid-January ! In the mean time, I'll try to post some articles about veganism and holidays recipes.
Sukuma wiki
It means “make the week longer” in kiswahili. It uses the meat leftovers and combine them with vegetables and a few other ingredients.
It’s usualy made with leafy green like cabbage or collards but can also be done with manioc, potato or pumpkin leaves.
Ingredients :
Leafy greens : 1 kg
Cooked fake meat : 500 g (I used leftovers from Nyama choma, as adviced on this recipe)
Oil : 4 tablespoons
Onion : 1
Tomatoes : 3
Cayenne chili : 1
Cayenne pepper/red pepper
Salt
Flour : 2 tablespoons
Lemon : 1
Preparation :
Step 1
Chop the green vegetables and tomatoes without their seeds. Blend the onion and chili.
Step 2
Cook the vegetables in ½ L of water.
Step 3
Mix the flour and the lemon and a few tablespoons of water. Stir until the mix is soft.
Step 4
Remove the vegetables from the pot, drain them.
Step 5
Sauté the onion, tomatoes and chilli in some warm oil. Add the spices. Add the meat and the lemon mix and stir until you get an onctuous sauce.
Step 6
Reduce the heat and add the vegetables. Cover and let it over low heat until the vegetables are cooked and the sauce get thicker.
Step 7
Serve with Mokimo.
Brandy cookies
For 25 little biscuits
Ingredients :
Flour : 80 g
Margarine : 125 g
Sugar : 115 g
Corn syrup : 125 g
Ginger : ½ teaspoon
Brandy : some
Coconut milk : a can (not a bottle, a can)
Preparation :
Step 1
In a pan, over medium heat, mix the margarine, sugar, corn syrup and ginger. Stir until the sugar melts. Let it cool down for 10 minutes.
Step 2
Add the flour and mix well. Preheat the oven on 350°F.
Step 3
Put margarine on an oven trail and pour the dough on by small spoonfuls. Put it in the oven and cook on 350°F until the biscuits are flat.
Step 4
Make whipped cream -> recipe on Hot for Food ? Yes but which ?
Step 5
Remove the trail from the oven then the biscuits from the trail carefully and and roll them in cigares before they are too cold.
Step 6
Mix the brandy with the whipped cream. Put this mix in the cigares with a (poche à douille).
Put in the oven during 1 hour.
Step 7
Serve very cold, by itself or with some tea or coffee.
