Cassoulet, Tomates farcies

J’ai remplacé les saucisses de Toulouse par des saucisses de tofu, les tranches de saucissons à l’ail par des tranches de saucisse à l’ail vegan, les tranches de poitrine par des lamelles de tofu fumé. Je n’ai rien mis pour le confit de canard.
Les temps de cuisson sont largement inférieurs à ceux de la recette originale puisqu’il s’agit de tofu et non de viande.

Today, the south of France is highlighted again, with the cassoulet from Occitanie !
Cassoulet
Preparation Time : 1 hour
Cooking Time :
For 4 people
Ingredients :
Cranberry beans : 380 g
Tofu sausages : 4
Vegan garlic sausages tranches : 8
Smoked tofu : 1 block, cut in slices
Tomato paste : 35 g
Breadcrumbs
Garlic : 5 to 6 cloves
Thyme
Bay leaves
Pepper
Salt
Preparation :
Step 1
Dive the cranberry beans in some cold water the day before.
Step 2
Drain them and cook them in a pot, covered with cold water. Add the garlic, thyme and bay leaves. Cook for 30 to 45 minutes, from the beginning of the boiling.
Step 3
Add the tomato paste, the vegan garlic sausages and the smoked tofu slices.
Step 4
In a pan, grill the sausages. Then add them to the pot. Add salt, pepper. Let it cook for like 10 more minutes.
Step 5
Preheat the oven on 230°F.
Step 6
Rub some garlic in two big roasting pan, then pour the pot’s mix in the both of them equally. The sauce level should be higher than the beans. Sprinkle the breadcrumbs on top of the plate. Then, put in the oven for about 30 minutes.
Step 7
Check often that it cooks slowly and that there is enough sauce, the level should always be higher than the beans. For time to time, push on the pieces of tofu to put them back in the sauce.
Step 8
Serve warm. It’s even better reheated.

Tomates farcies
Preparation Time : 20 minutes
Cooking Time : 45 minutes
For 4 people
Ingredients :
Veggie ground : 500 g
Tomatoes : 4
Onions : 3
Garlic : 2 cloves
Thyme
Parsley
Margarine
Pepper
Salt
Preparation :
Step 1
Peel and chop the onions and garlic cloves. Put half of the onions in a bowl with the veggie ground. Mix together. Add the garlic, salt, pepper and a little bit of parsley.
Step 2
Cut the top of the tomatoes and empty them. Add pepper and salt inside of them. Add the bowl mix inside and put the tops back on.
Step 3
Preheat the oven on 355°F.
Step 4
Put the rest of the onions in an oven plate with the tomatoes’ flesh. Add the tomatoes in the plate. Sprinkle some thyme on top of it and put a pat of margarine on top of each tomato.
Step 5
Cook in the oven for around 45 minutes.
Step 6
Serve with rice.
