Croquettes de banane plantain, curry de tofu

Nous partons pour un long voyage aujourd'hui, aux Antilles et dans l'Océan Indien. Ces îles sont riches en recettes diversifiées et très différentes de la métropole.

J'ai eu du mal à cuire correctement l'une de mes bananes plantains, soyez sûr-e-s qu'elles sont restées suffisamment longtemps dans l'eau bouillante avant de les sortir car, une fois ouvertes, vous ne pouvez plus les cuire comme il faut... ou du moins, je n'ai pas trouvé comment.

J’ai remplacé le thon par des blocs de tofu et la sauce d’huîtres par de la sauce soja.

We are going on a very long trip today, in the Antilles and the Indian Ocean. Those islands are rich in diverse recipes and those are really different from the one from the metropole.
The plaintain nuggets come from the Antilles, composed by Guadeloupe, Martinique, Saint-Bartélémy and Saint Martin.
Croquettes de banane plantain
Ingredients :
Plantains : 2
Veggie ground : 100 g
Flour : 100 g
Bread crumbs : 100 g
Melted margarine : some then add more if needed
Garlic powder : 1 teaspoon
Sweet chilli powder or paprika : ½ teaspoon
Salt : 3 pinches
Pepper : 3 pinches
Oil : to fry
Preparation :
Step 1
In a pot, bring to boil some water and put the plantains in it for 10 minutes.
Step 2
Put them quickly in cold water to stop the cooking then remove the skin.
Step 3
In a bowl, mash the plantains with a fork they are mashed very well. Add the veggie ground, chilli, garlic, pepper and salt. Mix all together.
Step 4
Put the melted margarine in a soup plate, flour in another one, breadcrumbs in another.
Step 5
Form small balls with your dough then dive it successively in the flour, then margarine, then breadcrumbs.
Step 6
Warm up some oil in a pot then dive the balls in until they are golden.
Step 7
When they are done, put them in a metal strainer over a plate to get rid of the excedent oil.
Step 8
Serve warm, it’s crispier.
I had trouble cooking the plantains correctly, make sur they stay long enough in the boiling water because, once open, you cannot cook them correctly... or at leat, I did find out how.
The Réunion has the tofu curry to offer.
Cari de tofu
Ingredients :
Tofu : 1,2 kg
Small tomatoes : 6
Onions : 6
Garlic : 6 cloves
Ginger : 1 piece
Chilli : to taste
Tumeric : ½ teaspoon
Thyme : ½ teaspoon
Soya sauce : 1 tablespoon
Salt
Preparation :
Step 1
Cut the tofu in small pieces. Mince the onions and tomatoes.
Step 2
Crush together the salt, garlic, ginger and chili.
Step 3
Heat up 4 tablespoons of olive oil. Sauté the onions for 3 minutes in it. Add the crushed mix in, stir for 1 minute.
Step 4
Add the tomatoes, tumeric, thyme, mix well.
Step 5
Add a cup of water, heat over medium heat and let it stand for 5 minutes.
Step 6
Add the pieces of tofu, stir delicately.
Step 7
Cover, let it cook for 15 minutes.
