Lomo saltado, Papas rellenas

Nous finissons cette semaine de recette péruvienne avec deux recettes salées :)

J'ai remplacé le boeuf par du shiitake, une sorte de champignon. Je l'ai cuit de la même façon qu'indiqué pour le boeuf.

J’ai remplacé le poulet par deux branches de céleri, juste parce que j'avais envie de manger des légumes et que j'avais du céleri au frigo. Je n’ai pas mis les oeufs.

Comes first the lomo saltado :
Lomo saltado
Preparation Time : 10 minutes
Cooking Time : 15 minutes
For 4 people
Ingredients :
Shiitake : 500 g, cut in thin slices
Red onion : 1, cut in thick slices
Tomatoes : 2, cut in thick slices and without seeds
Yellow chilli paste : 1 tablespoon
Garlic : 2 mashed cloves
Oil : 3 tablespoons
Soy sauce : 3 tablespoons
Red wine vinegar : 3 tablespoons
Fresh cilantro : ½ bunch, finely cut with scissors
Salt
Pepper
Preparation :
Step 1
Marinate the shiitake slices in the soy sauce, wine, salt and pepper, during 15 minutes.
Step 2
In a wok or a large pan, add the oil and sauté the shiitake in for 10 minutes. Put the marinade aside.
Step 3
Add the garlic, onion, tomato, chilli paste and stir for a few minutes. Add the soy sauce and vinegar from the marinade and mix all together. Correct the seasoning with salt and pepper if necessary.
Step 4
Remove from the heat, add the cilantro and serve immediately with white rice and french fries.
Then, the papas rellenas :
Papas rellenas
Preparation Time : 1 hour
Cooking Time : 6 to 8 minutes
For 4 people
Ingredients :
Potatoes : 7 to 8
Celery : 2 branches
Tomatoes : 1
White onion : 1
Garlic : 3 cloves
Black olives : a dozen
Yellow chili : 1 good tablespoon (or more, to taste)
Olive oil
Flour : a little
Cumin, salt, pepper
Fresh flat parsley (to decorate)
Red onion : 1
Tomato : 1
Cucumber : ½
Lime juice : 1 lime
Yellow chilli : 1 (optional)
Preparation :
Step 1
Put the potatoes to cook in a pot with salty water. During the cooking time, peel and cut the onion, peel, remove the germ and crush the garlic. Cut the seeded tomato and the olives in small dices. Cut the tofu blocs in dices.
Step 2
Peel the cooked potatoes and mash them well immediately, season with pepper and salt. Reserve.
Step 3
Sauté the onion in a little of olive oil then add the garlic, tomato dices, tablespoon of yellow chilli, 2 pinches of cumin. Mix all together then add the tofu pieces. Let it cook for a few minutes, season with salt and pepper. Add the olives. Mix and reserve.
Step 4
Make balls of mashed potatoes. Flatten them with your hand, put the stuffing in the center and close the mashed potatoes in a potato shape. Roll them in flour.
Step 5
Sauce : cut the minced red onion, tomato in dices, cut the cucumber in dices, the chilli in small pieces. Put them all together and season with lime juice.
Step 6
Sauté the stuffed potatoes in the pan in a little of oil during a few minutes on both faces so they get a pretty golden color.
Step 7
Serve warm with parsley leaves on top and accompany with the sauce.
